Apple Galette

So the other day I faced the dilemma of should I toss a couple of apples or make something out of them? They were perfectly good, but past the point where we would eat them out of hand because were picky like that.

Take an handful of apples and a few other random ingredients you probably have lying around the house and you have yourself an Apple Galette. Or what I like to call lazy pie... the best kind of pie because all the extra crusty bits you would cut off of your other prissy pie just get folded over onto the top making it super crust-o-licious.

By its very nature, a galette is rustic and not meant to be perfect. It's a round of pie dough folded over the edges of a filling, and what makes it so charming are its pleats, bends and wrinkles.
